Minneapolis eatery food found in 'danger zone'

The city of Minneapolis inspected 771 food-related businesses during the three-month period ending in February, up from 592 in the three months before that.
I reviewed 1,071 food-safety inspection reports to identify the 10 businesses with the highest number of critical violations during that time.
Critical violations, which I've listed below, are considered the ones most likely to cause food-borne illness. Asterisks indicate those violations that were still present at reinspection.
As of Friday, the Loring Grill & Bar, Doreen Ice Cream and Chicago Grill have passed reinspections. Maa Shaa Allah and the Cedar Cafe have reduced the number of violations from their February reinspections. Reinspections of others on the list have not yet taken place though corrections may have been made.
1 Maa Shaa Allah Restaurant, 605 Cedar Av., 15 critical violations (35 total)
Person in charge not knowledgeable.* Dish sink used for hand washing. Raw eggs stored above cilantro.* No sanitizer used when dishwashing. Many food items held between 41 and 140 degrees, the food-safety "danger zone."* No illness log on site.*
New at reinspection: Dishes sanitized but not rinsed. Refrigerator at 49 degrees. Tube from ceiling drained into sink.
2 La Alborada Market, 1855 E. Lake St., 12 critical (39 total)
Workers dried hands with wiping cloths, not paper towels. Raw eggs stored above prepared food.* Dishes washed improperly and without sanitizer. Food held at improper temperatures.* Cooler at 53 degrees. Food not date-marked. No illness log on site.
New at reinspection: No written plan for disposal of potentially hazardous food held at room temperature.
3 Cedar Cafe, 419 Cedar Av., 12 critical (32 total)
Person in charge not knowledgeable.* Food from unapproved source. Dishes washed improperly and without sanitizer.* Espresso wand dirty.* Sambusas at 44 to 48 degrees. Improper scoop.* No illness log on site.*
4 Don Chilo Restaurant/Fuentes de Sodas Vikky, 417 E. Lake St., #50, 11 critical (28 total)
No sanitizer in ice cream shop. Soup cooled too slowly. Food held at improper temperatures.* Improper food packaging.* Sink's spray arm incorrectly positioned. No illness log on site.
5 Minneapolis Club, 729 2nd Av. S., 10 critical (31 total)
Employee beverage in prep area. Raw meat stored above cheese, vegetables. Too-weak sanitizing solution. Cooked food cooled too slowly. Food held at improper temperatures. Food not date-marked. Unlabeled chemicals. Cleaner stored above food. No written plan for safety of vacuum-packed food.*
6 Imperio Maya, 417 E. Lake St., 9 critical (29 total)
Person in charge not knowledgeable.* No handwashing supplies at sink. Raw beef stored above vegetables.* Food not date-marked.* Food stored in improper packaging. No illness log on site.
7 Loring Kitchen & Bar, 1359 Willow St., 9 critical (23 total)
Employee beverages in prep area.* Food not date-marked. Chemicals stored above clean glasses. No illness log on site.* New at reinspection: No soap at hand sink. Expired food.
8 Stub & Herbs, 227 SE Oak St., 9 critical (22 total)
Person in charge not knowledgeable. Dirty cutting boards reused. Cooler at 58 degrees. Unlabeled chemicals.* New at reinspection: Cooler at 55 degrees.
9 Doreen Ice Cream, 3011 Cedar Av. S., #1, 8 critical (26 total)
Manager not knowledgeable. Chicken and beef cooked at unknown off-site location. No sanitizer on site. Cheese stored at 52 degrees. Food not date-marked. No illness log on site.*
10 Chicago Grill, 1120 Lowry Av. N., 8 critical (25 total)
Unhygienic practices observed. Raw meat stored next to cooked meat. Unsanitary food-prep tables, coolers and freezers. Dishwashing not properly done. Raw eggs at room temperature. No illness log on site.
