Three cheers to Kelly Olsen for seeing potential in a long-shuttered Anoka doughnut shop. Diners are lining up for a crack at the time-honored simplicity of a moist, sturdy cake doughnut, an airy raised doughnut slicked with rich chocolate icing, a maple-glazed Long John or the Beehive, the specialty of the late Hans Birkner.
