Collaborating with Midwestern farmers and purveyors is the business model behind Heartland Restaurant & Farm Direct Market and the personal mission of chef/co-owner Lenny Russo. During peak growing season, vegetables, fruits, meats, poultry and other ingredients from nearly 90 sources flood into the restaurant's workrooms and kitchen. "It's a matter of quality," says Russo. "We know these farmers, we've visited their farms, and so we know the quality of the product they're raising. But we also try to keep as much as possible of what we spend here in the local economy.
