2011 chateau de costis rouge
The experience: A classic Right Bank blend (40 percent merlot, 35 percent cabernet franc, 25 percent cabernet sauvignon), this is a full-flavored delight, with cherry/red berry fruit and nice grip, plus a nice firm, focused finish.
The setting: The mix of grapes takes this hearty red well beyond the beef realm, and the herbal hints from the cab franc help it play well with rosemary- or thyme-infused dishes. It will reward decanting.
