After seeing the kringle recipe in Thursday's Taste, a reader shot an email in my direction. She loved the sound of the recipe, but her son's extreme nut allergy meant that she couldn't make it for her family. Was there a nut-free version?
Yes. "Blue Ribbon Recipes" offers two nut-free kringle suggestions:
For a cream cheese filling: Combine 8 oz. cream cheese, softened, 1/4 cup granulated sugar and 1/2 teaspoon freshly grated lemon zest in a bowl. Substitute cream cheese mixture for pecan filling.
For a double-berry filling: Combine 1/2 cup raspberry preserves and 1/3 cup finely chopped cranberries in a bowl. Substitute preserves mixture for pecan filling (and do not substitute raspberry jam for preserves; it will leak out of the kringle).
Both sound pretty delicious to me.
