Recipe: polenta with spinach, sausage and egg

Polenta Bowl with Garlicky Spinach, Sausage and Poached Egg

Serves 4.

4 c. water (or a mix of water and milk)

• 1 c. polenta or cornmeal

• 1 tsp. salt

4 oz. (1 c.) goat cheese, shredded Cheddar or other cheese, plus more to serve

• 1/2 tbsp. olive oil

2 links chicken sausage, any kind, sliced into coins

• 3 garlic cloves, minced

1/8 tsp. chile flakes, plus more to serve

1 c. cherry tomatoes, sliced in half

• 6 oz. baby spinach

• 1/2 tsp. salt

• 4 eggs (or 1 per person)

For garnish, extra chile flakes or cheese
