CHICKEN SALAD WITH ROASTED VEGETABLE VINAIGRETTE

Roasted root vegetable vinaigrette:

• 2 medium carrots, peeled and cut into 1-in. pieces

• 2 medium parsnips, peeled and cut into 1-in. pieces

• 1 large shallot, quartered

• 1/3 c. plus 2 tbsp. extra-virgin olive oil, divided

• 1/4 c. frozen unsweetened apple juice concentrate, thawed

• 3 tbsp. apple cider vinegar

• 1 tsp. pure maple syrup

• 1 1/3 c. low-sodium chicken broth
