Asparagus and Spinach Frittata √

Serves 8.

2 tbsp. extra-virgin olive oil, divided

• 1 lb. asparagus, ends trimmed

• 1 1/2 tsp. coarse salt, divided

• 1/2 lemon

1 small yellow onion, finely chopped

• 2 garlic cloves, minced

1 lb. fresh spinach, steamed and chopped, or 1 (10-oz.) pkg. chopped frozen spinach, thawed and drained

1/4 tsp. freshly ground black pepper

• 10 eggs

• 1 1/2 c. whole milk

Sauce:

1 tbsp. salt-packed capers, rinsed and chopped
