Egg Coffee for a Crowd

Makes 36 cups. Note: From the Aug. 21, 1985, issue of Taste.

• 1 egg, beaten (shell and all)

• 11/4 lb. ground coffee

• 1 c. cold water

• 9 quarts (36 cups) cold water

Directions

In a medium bowl, mix beaten egg and egg shell into ground coffee. Stir in 1 cup cold water. Transfer coffee mixture into a cheesecloth bag (large enough to allow for coffee to swell) and seal bag.

Pour 9 quarts water into a large coffee pot. Immerse cheesecloth bag filled with coffee mixture into water. Bring water to a boil. Remove pot from heat. Leave bag in water 3 to 4 minutes, then remove and discard bag and stir coffee. Serve hot.
