Strandskov Elin Utoft, 85, died March 8, 2003, at St. Croix Regional Medical Center, St. Croix Falls, Wisconsin, after a brief illness. She was born at home in West Denmark, Luck, Wisconsin, on June 18, 1917, to Niels Henrik and Marie (Utoft) Henriksen. She attended Little Butternut School in West Denmark. After working in California and Minnesota, she married Hermod Strandskov January 12, 1946. They had met at a meeting of the Danish Reading Circle in Mpls. They made their home in Mpls until 1988 when they moved to Luck. Hermod died in 1991. Elin was baptized and confirmed at West Denmark Lutheran Church. During her years in Mpls she was an active member of St. Peder's Evangelical Lutheran Church. The Strandskov home was a place of beauty and hospitality for friends, family, and visitors from Denmark. She is survived by her son Henrik and his wife Nikki, and her daughter Annalee, of Mpls; three grandchildren, Niels, Cordelia, and Elinor Strandskov, of Minneapolis; her sister Selma (Mrs. Erling) Grumstrup and brother Kristian (Doris) Henriksen of Luck; and many nieces, nephews and cousins. Her sister Anna Sandlin died in 2002. A memorial service will be held at West Denmark Lutheran Church on Saturday, March 15, at 11:00 a.m. The church is about a mile west of Luck village on the west shore of Little Butternut Lake. Interment will be at a later date in West Denmark Cemetery. Memorials may be given to West Denmark Lutheran Church.
