Rustica Bakery is on a roll.

Last week, the 10-year-old Minneapolis bakery and cafe (pictured, above, in a Star Tribune file photo) opened its first outlet, in Eden Prairie.

Today, owner Greg Hoyt announced that he's launching a second suburban location, this time in the Mall of America. (Kudos to the megamall for recruiting such a top-quality local purveyor. More of this, please).

Don't expect a carbon copy of the Rustica bread-and-pastries brand. As the name suggests, Rustica Cookies & Creamery will focus on two primary, mall-friendly products: cookies, and trendy soft-serve ice cream.

The cookies side of the equation is a no-brainer, as the bakery produces some of the Twin Cities' most memorable iterations, including the dark, crackle-topped wonder that is its famous Bittersweet Chocolate Cookie. Hoyt is promising a "variety of new cookie flavors," but here's hoping he'll also include the recipes that Rustica customers have come to love, and crave.

The ice cream half of the business will be developed by Ben Spangler, the pastry chef who helped get the wildly popular Milkjam Creamery up and running earlier this year.

"Ben's experience in creating out-of-the-box flavors that grab people's attention speaks for itself," said Hoyt in a statement. "Our cookies-and-creamery concept gives Ben an opportunity to experiment with cookies and soft-serve flavors that will comfort yet excite. People will be blown away to taste the varieties we come up with on the classic treat of cookies and ice cream."

The shop will open this winter on the first floor of the mall's North Garden area, between Nordstrom and Sears.
