WINE
It turns out that Transylvania should be known for more than vampires: The delicious silvaner grape is believed to have been developed there. The current primary home for this white delight is Germany, and the Hans Wirsching Dry Silvaner 2010 ($17) is a swell exemplar. Vibrant with fresh acidity and minerality, it boasts beautifully integrated fruit (pear, citrus) leading to what my notes call a jolty finish (that's a compliment). Try it with creamy pasta dishes, smoked fish or chicken or your favorite stinky cheese. Available at Pairings and Thomas Liquors.
