Recipe: sauerbraten

Sauerbraten

Serves 8.

Marinade:

• 2 onions, chopped

• 2 carrots, peeled and chopped

• 2 ribs celery, chopped

• 2 1/2 c. dry red wine

• 1 1/2 c. red wine vinegar

• 1 c. water

• 12 cloves

• 1 tbsp. mustard seeds

• 2 bay leaves

• 2 tbsp. sugar

• 2 tbsp. coarse salt

1 tbsp. lightly crushed black peppercorns
