ROASTED LEMON CHICKEN WITH ASPARAGUS AND PEPPERS √

Serves 4.

• 4 bone-in, skin-on chicken thighs (see Note)

• 4 chicken legs with skin (see Note)

• 1/3 c. olive oil

• 1/4 c. lemon juice

• 1 tsp. salt

• 1/2 tsp. freshly ground black pepper

Glaze:

• 2 tbsp. olive oil

• 1 to 2 tbsp. lemon juice

• 2 tbsp. Dijon or favorite grainy mustard
