QUICHE

Serves 4 to 6.

Note: From Amy Kelsch of Empire Coffee + Pastry of Minneapolis.

For dough:

• 1/2 c. (1 stick) butter, at room temperature

• 1/2 tsp. salt

• 1 egg yolk

• 2 c. flour

• 3 tbsp. water

• 1 tbsp. freshly squeezed lemon juice

For custard:

• 2 eggs

• 2 egg yolks

• 3/4 c. heavy cream

• 3/4 c. whole milk

• 1/2 tsp. salt

• Freshly ground pepper to taste

About 2 c. grated or crumbled cheese, herbs, cooked vegetables and/or cooked meats
