Hallelujah! It's harvest time. The bell peppers and onions, leafy greens, sweet corn and tomatoes are spilling over the stalls at the markets and onto our dinner plates. And that's just the first ring of vegetables. Give us eggplant and broccoli, please. Pack up the cabbages, cauliflower and beans that await the handiwork of a cook, whether it's you or a designated other. The basil, rosemary and cilantro are fragrant and ready to be tossed into our meals. Who needs fancy recipes when the harvest is this young? Eat hearty, but eat simple. There is no better time to reach for your choice of familiar vegetable. But don't stop there!
