YAMS AND SAUSAGE ROAST

Serves 4 as an entree; 6 as a side dish.

Cost per entrée serving: $1.69

• 11/2 tbsp. olive oil

• 3 medium Garnet yams (about 2 lb.), peeled and cut into 1-in. chunks

• 1 medium onion, quartered and separated into pieces

• 1 Granny Smith or other firm apple, unpeeled, cut into 16 pieces

• Salt and pepper, to taste

• Fresh or dried thyme, to taste

• 4 bratwurst or other link sausages, parboiled for about 15 minutes and cut into 1-in. pieces

Directions

Preheat oven to 400 degrees.

Put olive oil in bottom of a 11/2 or 2-quart casserole. Add yams, onion, apple, salt, pepper and thyme. Stir and coat thoroughly.

Stir in sausage pieces and place in oven. Cover and cook for 20 minutes. Then uncover, stir well and return to oven uncovered and cook until yams, onions and apples are tender, about another 20 minutes.
