San Martino dei Colli Trevigiani Frizzante Prosecco

Time for bubbles! Which, in my book, is any day that ends in "y." And while I'm something of a cava guy, one of the Proseccos I thoroughly enjoy is the San Martino dei Colli Trevigiani Frizzante Prosecco ($16). It's got a super-nice, lime-y nose, with citrus and pear flavors dancing around on the palate with some spritely acidity, melding into the mouthwatering finish. From a winery near Venice that was founded in 1918, this is a bracing, lively spring delight, by itself or in a bellini or mimosa. It also is perfectly suited to fried calamari, shrimp or most any fish or fowl, as well as spring greens, with or without pickled ramps.
