Let's do the numbers: Its busy northeast Minneapolis workrooms produce 120,000 (8-oz.) containers of hummus spreads each month (for sale at Costcos nationwide), nearly 6,000 pieces of pita bread are baked each day and, on a typical action-packed Saturday, CEO Majdi Wadi said his counter-service cafe can sell 500 two-fisted gyro sandwiches.
