UM YA YA BURRITOS

Makes 15 to 20 servings.

Note: Cost per serving for 15 burritos with pulled pork, tortilla and spices, about 80 cents per burrito. These are very spicy, so adjust seasonings if you prefer.

• 2 tbsp. cumin

• 2 tbsp. dried oregano

• 2 tbsp. garlic salt

• 2 tbsp. black pepper

• 4 lb. pork shoulder roast (also called a butt roast)

• Black beans, soaked and cooked or from a can and warmed (whatever amount preferred)

• Cooked rice (whatever amount preferred)

• Salsa, optional

• 15 flour tortillas

Directions

Combine the cumin, oregano, garlic salt and pepper. Rub the spices into the pork roast, place in a large bowl and refrigerate overnight, turning once.

Place the roast in a slow cooker and cook for 6 to 8 hours, or until the meat shreds easily.

Divide into individual portions, add rice and beans, and salsa, if desired, and wrap in a flour tortilla.
