The latest opening date for Toby Keith's megabar: late spring

The country star's chain of oversized high-energy, bull-riding, hard-drinking bars finally comes to the Twin Cities. It just doesn't have a concrete opening date.

Yee-haw! Toby Keith's I Love This Bar & Grill finally has an opening date and it's... "late spring." Huh? That's the latest word from the bar's publicity people. C'mon Toby, Minnesota is dying for a chance to ride that fabled mechanical bull. (It's also named "Toby.")

I'll update you when they come back with some concrete dates (it's rumored to be in mid-May). For now, the gigantic bar (14,700 square feet) is under construction at the Shops at the West End in St. Louis Park. The lifestyle center is currently home to the wildly successful Cooper and Crave. A new restaurant called Ringo opened last week.

Named for Keith's hit song, "I Love This Bar," the spot will feature an 88-foot guitar-shaped bar and 38 high-definition televisions (making it a country/sports bar). Capacity tops out at about 850 people. Expect to see live bands and dancing six nights a week. The man himself is expected to make an appearance at the bar a month or so after it opens.

Did I mention they'll have a mechanical bull named Toby?
