• 12- to 14-lb. turkey, fresh or thawed, including neck and giblets
• 11/2 tbsp. kosher salt
• 1/2 c. extra-virgin olive oil, divided
• 1 lb. carrots, peeled and cut into 2-in. chunks
• 2 large onions, peeled and chopped into 1-in. pieces
