Swedish Fish

Serves 4 generously.

Cost per serving using tilapia: $1.90.

• 6 tbsp. butter

• 1 medium onion , chopped coarsely

• 1 (4-oz.) can mushrooms

• 1 lb. fish fillets

• Fresh or dried dill, to taste

• Salt and pepper, to taste

• 1/2 c. half-and-half

Directions

In a large skillet, over medium heat, melt butter. Add onion, sautéing until transparent.

Add fish fillets and sauté for a few minutes on both sides. Add mushrooms, salt and pepper, half-and-half and dill. Turn down heat to a low simmer and cook until mixture thickens slightly, about 10 minutes, basting the fish with sauce several times.
