Buttermilk Roasted Chicken With Crunchy Croutons

• 2 c. buttermilk
• 3 tbsp. kosher salt, divided
• 4 sprigs of fresh rosemary, divided
• 1 (31/2- to 4-lb.) whole roasting chicken
• 1 tbsp. grapeseed or canola oil
• 1 lemon, sliced into 4 wedges
