Apricot-Glazed Chicken
Serves 3 to 4.
With dried fruit, roasted chicken and a pan sauce, this dish is a bit reminiscent of chicken marbella, which is one of author Jeremy Scheck's favorite childhood dishes. Unlike chicken marbella, you do not need to marinate it ahead of time. You can use chicken thighs or a cut-up whole chicken. And if you have convection, use it. For the chicken:
• 8 bone-in, skin-on chicken thighs
• 3 tsp. kosher salt
• 2/3 c. (4 oz.) dried apricots, about 15
• 1 red onion, sliced into thick wedges
• 1 tsp. freshly ground black pepper
