State Fair treat seller could use sweet idea

Rainbow Ice Cream sponsors a contest in search of new flavor.

OK, here's the scoop: After 80 years at the Minnesota State Fair, Rainbow Ice Cream has decided to mix things up. So the stalwart ice cream stand will feature a new product, courtesy of someone like you.

Maxine Davis, whose family started selling ice cream at the fair in 1930, is conducting a contest to concoct a new frozen flavor. Cheese-curd custard, anyone?

"We created lingonberry ice cream about 10 years ago and have had intense interest in that," Davis said. "So we thought, why not try a contest to add something else new?"

The winner will be announced in mid-July and receive two 3-gallon tubs of the new ice cream, four tickets to the fair, a limo ride to and from the fair, four tickets to "A Prairie Home Companion" at the fair, and some State Fair swag.

Entries so far have included sweet corn -- "we tried this one year and couldn't get it to go," Davis said -- and Minty-sota State Fudge, with chocolate chips, mint, pretzels and fudge ribbons.

So far, she added, no one has nominated mini-doughnut ice cream, Pronto Pup swirl or lutefisk gelato (no lye!).

And don't even think about suggesting ice cream on a stick. Who would eat anything like that?
