Soup cures late-winter blues

There is nothing that this end of winter weather demands more than a big bowl of beautiful soup. This recipe from Lisa Durkee, proprietor of the Amboy Cottage Cafe, in Amboy, Minn., is sure to have folks sopping every last warming bit from their bowls with a hunk of bread.

Hungarian Mushroom Soup, like everything in this lovely gathering place, is made from scratch. The meat and milk come from local suppliers; wheat and corn chips are milled at Whole Grain Milling; in the summer, veggies and herbs grow in the garden and nearby farms.

This slender woman with a quick smile gets things started around 5:30 a.m. when the regulars come in for coffee, grabbing their cups off the pegs on the wall over the ever-ready pot. Durkee's soups mark the season and change every day. This one is a favorite, sure to chase away the late-winter blues.
