1 lb. ground turkey
1 small onion, chopped
1/3 c. or more chopped bell pepper
1 rib celery, chopped

1 lb. ground turkey

1 to 2 garlic cloves, minced, optional
Salt and pepper to taste
Herbs to taste (such as 1/2 tsp.dried thyme, oregano or basil)
1 (15 oz.) can tomato sauce
About 1/2 tsp. sugar
Directions
Heat oil in a skillet over medium heat. Add turkey, onion, bell pepper, celery, garlic, salt and pepper, and herbs and sauté, stirring often, until turkey is thoroughly cooked. Drain any liquid from pan and add the tomato sauce and sugar. Continue cooking until thoroughly heated and mixture reaches desired consistency. Serve in buns or on toast.
