Details: The final undeveloped corner of Edina's Southdale Center would become home to the Twin Cities' first stand-alone Shake Shack restaurant under plans submitted by mall owner Simon Property Group.
The Shake Shack hamburger chain, which started in New York City 13 years ago, currently has its sole Minnesota location at the Mall of America.
When that opened in July 2016, executives said they were scouting other Twin Cities sites. That search has now yielded a proposal for Southdale's northwest corner, which is the southeast corner of France Avenue and 66th Street. If approved by the city, it would join the mall's northeast corner (which is getting a Homewood Suites Hotel) and its southwest corner at France Avenue and 69th Street (getting a Restoration Hardware) as parking-lot redevelopment sites. The mall built apartments on its southeast corner in 2014.
