Salad dressing recipes: It's Greek to Me

Also: Creamy French Tarragon, Honey Dijon, Creamy Italian, Weeknight Caesar and Garlic Herb Vinaigrette.

IT'S GREEK TO ME

Note: White wine vinegar can be substituted for the white balsamic vinegar. Use lots of oregano, and serve with romaine lettuce, kalamata olives, feta cheese and red onion.

• 2 tbsp. olive oil

• 1/2 tbsp. white balsamic vinegar (see Note)

• 1/2 tbsp. lemon juice

• Oregano, to taste

• Pinch of salt

• Freshly ground black pepper

Directions

Whisk together ingredients, then taste for seasonings and adjust accordingly.

Creamy French Tarragon

Note: White wine vinegar can be substituted for the white balsamic vinegar. This is nice on butter lettuce with blanched asparagus and toasted walnuts.

• 1 tbsp. olive oil

• 1 tbsp. mayonnaise

• 1/2 tbsp. white balsamic vinegar (see Note)

• 1/2 tbsp. lemon juice

• 1 tsp. Dijon mustard

• Dried tarragon, to taste

• Pinch of salt

• Freshly ground black pepper

Directions

Whisk together ingredients, then taste for seasonings and adjust accordingly.

HONEY DIJON

Note: White wine vinegar can be substituted for the white balsamic vinegar. Poppy seeds are also good in here.

• 2 tbsp. olive oil

• 1 tbsp. white balsamic vinegar

• 1 tsp. Dijon mustard

• Honey, to taste

• Pinch of salt

• Freshly ground black pepper

Directions

Whisk together ingredients, then taste for seasonings and adjust accordingly.

Variation: Make it creamy with half olive oil and half mayo. Or, for a salad with apples or pears, sweeten the dressing with maple syrup.

CREAMY ITALIAN

Note: White wine vinegar can be substituted for the white balsamic vinegar.

• 1 tbsp. olive oil

• 1 tbsp. mayonnaise

• 1 tbsp. white balsamic vinegar (see Note)

• 1/2 tsp. or more crushed garlic (1 medium clove)

• Oregano, to taste

• Basil, to taste

• Thyme, to taste

• Pinch of salt

• Freshly ground black pepper

Directions

Whisk together ingredients, then taste for seasonings and adjust accordingly.\

WEEKNIGHT CAESAR

Note: Go heavy on the pepper. Toss the dressing with romaine lettuce, croutons and shaved Parmesan.

• 1 tbsp. olive oil

• 1 tbsp. mayo

• 1 tbsp. lemon juice

•1/2 tsp. or more crushed garlic (1 medium clove)

• Dab of Dijon mustard

• Anchovy paste, to taste

• Pinch of salt

• Freshly ground black pepper

Directions

Whisk together ingredients, then taste for seasonings and adjust accordingly.

GARLIC HERB VINAIGRETTE

• 2 tbsp. olive oil

• 1 tbsp. red balsamic vinegar

•1/2 tsp. or more crushed garlic (1 medium clove)

• Oregano, to taste

• Basil, to taste

• Thyme, to taste

• Pinch of salt

• Freshly ground black pepper
