RECIPES: TINY TOMATO ZITI

TINY TOMATO ZITI Serves about 6, or 8 as a side dish.

The "Sugar Plum" grape tomatoes from Del Cabo are the best bet for this dish.

• 1 lb. fusilli or any shaped pasta

• 2 to 3 tbsp. good quality extra-virgin olive oil, or to taste

• 1 pint grape tomatoes, sliced in half (see Note)

• 2 to 3 tbsp. chopped Italian parsley, or to taste

• 2 tbsp. chopped fresh basil, or to taste

• 1 tsp. fresh thyme leaves, or to taste

• Coarse salt and freshly ground black pepper

• 1/4 c. grated Parmesan cheese, or to taste

Directions

In a large pot of boiling salted water, cook the pasta, stirring occasionally, until "al dente," about 12 minutes. Drain and return to the pot.

Toss olive oil, tomatoes, parsley, basil, thyme and salt and pepper to taste. Stir in Parmesan cheese and serve hot or at room temperature.
