Pecan-Crusted Bourbon Chicken

Note: If you prefer your chicken without bourbon, substitute 1 tablespoon vanilla extract with 2 tablespoons water.
• 3/4 c. finely chopped pecans
• 3/4 c. dry bread crumbs
• 1/4 c. canola oil, divided
• 8 boneless, skinless chicken breast halves
• 1/4 c. Dijon mustard
