Pear and Prune Tsimmes

Serves 6 to 8 as a side dish.

This can be assembled up to a day before it is baked. Just cover the pan tightly with foil and refrigerate. No need to bring it to room temperature before baking.

• Nonstick spray for the pan

• 10 medium-size ripe, juicy pears (any kind but sickle or Bosc, which are too grainy)

• 1 lb. pitted prunes

• 4 tbsp. fresh lemon juice

• 2 tbsp. light-colored honey

• Cinnamon

Directions

Preheat the oven to 350 degrees. Spray a 9- by 13-inch baking pan with nonstick spray.

Peel, core and slice the pears (not too thin). Halve the prunes. Spread the pear slices in the prepared pan, and arrange the prunes on top. Drizzle with the lemon juice and honey, and dust with cinnamon.

Cover tightly with foil and bake for 30 minutes. Uncover the pan, and bake another 20 minutes. Serve hot, warm or at room temperature.
