Note: Panko bread crumbs are lighter and bigger than the traditional dry crumb, which could be substituted. Peel and remove the seeds of the butternut squash before cubing it. • 2 1/2 c. ( 1/2 -in.) cubed butternut squash (see Note)
• 3 tsp. olive oil, divided
• 1/2 tsp. salt, divided
• Freshly ground black pepper to taste
• 2 1/4 c. (1 percent) low-fat milk, divided
• 1 medium onion, sliced
