Recipes: Fresh mint marinade/dipping sauce

FRESH MINT MARINADE/DIPPING SAUCE

Makes about 1 cup.

• 2 large cloves garlic

• Juice of a large lime, or to taste

• 2 tsp. sugar, or to taste

• 1-in. piece fresh ginger

• 11/2 c. fresh mint leaves, lightly packed

•1/2c. fresh coriander leaves, lightly packed

•1/4tsp. salt

•1/2tsp. freshly ground black pepper

•1/3c. extra-virgin olive oil

•1/2c. water

Directions

Have a food processor turned on. Drop in the garlic through the feed tube. When it's minced, turn off the machine, scrape down the garlic and add the lime juice. Let the mixture stand while you gather the other ingredients.

Add sugar, ginger, mint leaves, coriander leaves, salt, pepper, oil and water, and process until finely chopped, but not puréed. Taste the sauce for tart-sweet balance, adding more lime, sugar and/or salt as needed.
