Curried chicken and Honeycrisp salad
Makes 4 first-course or light-lunch servings.
Note: If making ahead, chill chicken mixture (without almonds) up to one day. The salad can also be tucked into pita bread for sandwiches.
2 tbsp. sliced almonds
1 tsp. mild curry powder
1/2c. mayonnaise
1/2lb. smoked chicken breast, cut into 1/2-in. chunks
1 Honeycrisp apple (5 to 6 oz.), cored and cut into 1/2-in. chunks
