Curried chicken and Honeycrisp salad

Makes 4 first-course or light-lunch servings.

Note: If making ahead, chill chicken mixture (without almonds) up to one day. The salad can also be tucked into pita bread for sandwiches.

• 2 tbsp. sliced almonds

• 1 tsp. mild curry powder

•1/2c. mayonnaise

•1/2lb. smoked chicken breast, cut into 1/2-in. chunks

• 1 Honeycrisp apple (5 to 6 oz.), cored and cut into 1/2-in. chunks

• 1 tbsp. minced parsley

• 1 quart (about 4 oz.) spring mix or baby lettuces, rinsed and crisped

• Thin slices (1/16 in.) of Honeycrisp apple, for garnish

Directions

In a small skillet, stir almonds over medium-high heat until golden brown, about 4 minutes. Pour nuts from pan onto a small plate.

In the same skillet, stir curry powder over medium-high heat until fragrant, about 1 minute. Pour from pan into a large bowl.

Add mayonnaise, chicken, apple and parsley to bowl. Stir to combine.

Place 1 cup of spring mix on each of 4 plates. Spoon about2/3cup chicken salad onto the lettuce on each plate. Arrange Honeycrisp slices around the chicken salad; top with toasted almonds.

Honeycrisp and goat cheese pizza

Serves 4.

For a crisper crust, bake pizza directly on the oven rack.

• 1 (12-in.) baked pizza crust

• 1 c. pizza sauce

• 3 oz. goat cheese, cut into 1/4-in. slices

• 1 Honeycrisp apple (about 5 oz.), cored and cut into 1/4-in. slices

•2/3c. shredded mozzarella cheese

• 2 tbsp. grated Parmesan cheese

• 1 tbsp. thinly sliced fresh basil

• Freshly ground pepper

Directions

Place pizza crust on a baking sheet or pizza pan. Preheat oven to 425 degrees.

Spread pizza sauce on crust. Arrange goat cheese and apple evenly on sauce. Scatter mozzarella and Parmesan cheeses over the top.

Bake until cheeses melt and begin to brown, 10 to 12 minutes.

Sprinkle basil over pizza and add pepper to taste. Cut into 8 wedges.

Honeycrisp slices with spiced cream

Makes1/2cup spiced cream.

This combination is perfect for a snack or an impromptu dessert. For a variation, substitute an equal amount of Chinese five-spice for the pumpkin pie spice.

•1/2c. sour cream

• 4 tsp. (packed) brown sugar

•1/2tsp. pumpkin pie spice

• Honeycrisp apple slices

Directions

In a small bowl, stir together sour cream, brown sugar and pumpkin pie spice. Serve with apple slices to dip into sauce.
