3/4 lb. ground Italian sausage
1/2 c. medium-diced onions
1/4 c. horseradish
2 tbsp. finely chopped garlic
3/4 c. chile sauce

2 tsp. seasoned salt, such as Lawry's
2 tsp. ground black pepper
1/4 c. sour cream
1/4 c. finely chopped fresh parsley, without stems
2 tsp. dried oregano or marjoram
2 c. Japanese bread crumbs (available at specialty stores)
Preheat oven to 350 degrees. In a large mixing bowl, combine the beef and sausage, and mix thoroughly. Add the onions, horseradish, garlic, chile sauce, seasoned salt, pepper, sour cream, parsley and oregano. Mix for 5 minutes. Add the crumbs and mix for 3 minutes.
Using a 18-by 24-inch sheet of parchment (baking) paper, place the small end in front of you on a work table. Place the meat in a log form on the near end of the paper about 5 inches high and 5 inches across; press the meat tightly so there are no air holes in the log (knead as you would when pressing pizza dough); tuck in ends.
Smooth the ends and leave 4 inches at each edge of the paper.
Roll the meat in the paper away from you and place the rolled log onto a baking sheet. Bake for 1 hour and 15 minutes or until the internal temperature reaches 160 degrees.

Trinity Grille Meatloaf
Serves 12.
1/3 bunch celery
1 lb. onions
1/3 lb. (1 1/3 sticks) butter
1/3 c. bread crumbs
3 eggs, lightly beaten
3/4 c. milk
4 lb. ground beef, 85 percent lean
1 tbsp. salt
1/2 tbsp. granulated garlic
1/2 tbsp. dry thyme
Ketchup
Preheat oven to 350 degrees. Mince celery and onion, then saute at low heat in butter until caramelized. Refrigerate until cool.
Soak bread crumbs with combined eggs and milk.
Mix celery, onions, egg mixture, ground beef, salt, garlic and thyme in large mixing bowl. Do not overmix.
Form a loaf in a 10-by 6-inch loaf pan. Bake for 1 1/2 to 2 hours covered or until internal temperature reaches 160 degrees. Remove cover and generously coat with ketchup.
Recover with foil and let the loaf rest for 15 minutes in a low oven.
