Recipes: Buffalo wings

Serves 6.

• Vegetable oil

• 21/2 lb. chicken wings, split and tips discarded

• 1/2 c. cayenne pepper sauce (see Wing Tips)

• 1/3 c. butter

• Blue cheese salad dressing

Directions

Heat about 2 inches of vegetable oil in a large saucepan until it reaches about 350 degrees. Cook wings in batches until golden brown, about 12 minutes; don't crowd the pan.

Meanwhile, combine cayenne pepper sauce and butter in a small saucepan. Using tongs, dip hot wings in sauce until coated.

Garlic Buffalo wings: Add 1/2 teaspoon garlic powder and 1/2 teaspoon sugar to the sauce recipe.

Jamaican Buffalo wings: For sauce, combine 3/4 cup ketchup, 1 tablespoon vinegar and 1 tablespoon dry jerk seasoning (sold with spices in supermarket).

Asian Buffalo wings: For sauce, combine in a small saucepan 3/4 cup water, 1/2 tablespoon cornstarch, 1/3 cup sugar, 2 tablespoons soy sauce, 1/2 teaspoon ground ginger and 1/2 teaspoon garlic powder.

Breaded Buffalo wings: Before frying, coat wings in mixture of 1 cup flour; 1/2 teaspoon salt; 1/4 teaspoon ground black pepper and 1 teaspoon ground red pepper.

Buffalo chicken tenders: Substitute one (28-ounce) package of breaded chicken tenders for wings, baking according to directions.

CHEESY BUFFALO CHICKEN DIP

Makes 3 cups.

This dip gives you the flavor of Buffalo wings without the messy fingers.

• 1 (8-oz.) pkg. cream cheese

• 1/2 c. blue cheese salad dressing

• 1/2 c. Buffalo wing sauce (see Wing Tips)

• 1/2 c. crumbled blue cheese or shredded mozzarella

• 2 c. shredded, cooked chicken

Directions

Heat oven to 350 degrees. Place cream cheese in deep-dish 9-inch pie plate.

Microwave 1 minute to soften. Whisk in salad dressing, cayenne pepper-butter mixture and cheese until smooth. Stir in chicken.

Bake 20 minutes or until mixture is heated through. Stir well. Garnish as desired. Serve with crackers or cut-up vegetables.

BUFFALO NACHOS

Serves 4.

• 2 c. diced cooked chicken or turkey

• 1/2 c. Buffalo wing sauce (see Wing Tips)

• 1 (10-oz.) bag tortilla chips

• 2 c. shredded Cheddar or Jack cheese

• Blue cheese or ranch salad dressing

• Sour cream

Garnishes:

• 1/2 c. diced tomatoes

• 1/2 c. sliced pitted black olives

• 1/2 c. diced bell peppers

• 1/2 c. diced jalapeño peppers

• 1/2 c. sliced green onions

Directions

Toss chicken with Buffalo wing sauce.

Layer chicken mixture with chips and cheese in baking dish or on pizza pan.

Bake at 350 degrees for 5 minutes until hot and cheese melts. Garnish as desired. Serve with blue cheese dressing, sour cream and additional Buffalo wing sauce.
