Recipe: Tomatillo Hash With Sausage

TOMATILLO HASH WITH SAUSAGE

Serves 3.

Note: If you're pressed for time, use precooked, frozen brown rice at the grocery. It reheats quickly. Raise the heat with your favorite hot sauce.

• 3 links Italian turkey sausage (without fennel seed)

• 1 tbsp. olive oil, or more as needed

• 1 onion, chopped

• 1 seeded, chopped red bell pepper

• 1 seeded. chopped poblano pepper

• 1/4 tsp. salt

• 2 tomatillos, husked, chopped

•1/2 c. white wine or chicken broth

•2 c. cooked brown rice, heated

• Chopped fresh cilantro, optional

Directions

Squeeze the sausage out of casings, forming into 1-inch balls as you go. Heat a large, heavy skillet over medium-high heat; add oil and sausages. Cook sausage balls, turning to cook all sides, until browned, 8 minutes. Remove from skillet.

Add more oil to skillet if needed; stir in onion and peppers. Add salt. Cook until beginning to soften, 5 minutes. Stir in tomatillos; cook until just softened, 2 minutes. Add wine or broth. Return sausage balls to skillet; let simmer until heated through, 2 minutes. Serve over the brown rice; top with cilantro.
