Recipe: Shortbread Turtles

Shortbread Turtles

From Linda Quinn of Cafe Latte.

Makes about 5 dozen cookies.

4 c. flour

1 c. powdered sugar

1 lb. (4 sticks) cold butter, cubed

¼ c. granulated sugar

1 c. semisweet chocolate pieces

1 c. pecans, coarsely chopped

½ c. caramel sauce

In a large bowl, combine flour and powdered sugar. Then add butter, blending until just combined. Form into 2 (10-inch-long) logs. Roll in granulated sugar, wrap in plastic wrap and refrigerate several hours until dough is firm.

Preheat oven to 375 degrees. Slice dough into ¼-inch-thick cookies and bake 8 to 10 minutes until very light brown. Remove from oven and immediately put chocolate pieces on each cookie. As chocolate melts, spread across cookie using the back of a spoon. Top with a few pecan pieces and drizzle lightly with caramel sauce.
