Fruit Pizza

1 (18-oz.) roll-slice-and-bake sugar cookies
1 (8-oz.) pkg. cream cheese or reduced-fat cream cheese
1 tsp. vanilla
½ c. sugar
1 banana, sliced

1 (18-oz.) roll-slice-and-bake sugar cookies
1 (8-oz.) pkg. cream cheese or reduced-fat cream cheese

1 c. fresh strawberries, cleaned and sliced
1 to 2 c. white seedless grapes
1 (8-oz.) can crushed pineapple, well drained
Glaze:
1 c. sugar
3 tbsp. cornstarch
Dash salt
¾ c. water
1 c. orange juice
¼ c. lemon juice
Preheat the oven to 350 degrees. Coat a 14-inch pizza pan with cooking spray. Cut cookies 1/8-inch thick and spread close together over the pizza pan. Bake 8 to 10 minutes until browned. Let cool. Mix cream cheese, vanilla and sugar; spread over cooled cookie. Arrange fresh fruit on cream cheese mixture. Mix sugar, cornstarch and salt; add water, orange juice and lemon juice in saucepan. Bring to the boil; cook 1 minute until slightly thickened. Cool. Pour evenly over fruit and refrigerate until ready to serve.
