Serves 6 (24 ravioli).
Note: Find wonton skins in the produce section of supermarkets.
• 2 c. part-skim ricotta cheese, drained
• 1 c. shredded mozzarella
• 1/2 c. minced parsley
• 1 whole egg plus 1 egg white, divided
• 1/4 tsp. salt
