Cafe Nordstrom Chicken Marinara with Roasted Vegetables

Serves 1 to 2.

Note: Tester roasted vegetables in a foil bag in a 450-degree oven for 35 minutes.

Marinara sauce:

1 tbsp. olive oil

¼ c. chopped yellow onion

1½ tsp. fresh chopped garlic

1 c. crushed tomatoes

¼ tsp. thyme

¼ tsp. oregano

¼ tsp. basil

½ tsp. salt

½ tsp. pepper

2 c. rigatoni pasta

Chicken and vegetables:

1 chicken breast, about 5 oz.

¼ c. roasted zucchini (see note)

¼ c. roasted yellow squash (see note)

1 plum tomato

Fresh basil for garnish

Parmesan cheese for garnish

For marinara sauce, saute onion in olive oil until translucent. Add garlic, crushed tomatoes, thyme, oregano, basil, salt and pepper. Simmer over very low heat for ½ hour or more, stirring often.

Cook pasta according to package directions.

Grill chicken breast and cut into julienne strips. Combine grilled chicken with roasted vegetables, add pasta and marinara sauce; garnish with fresh basil and Parmesan cheese.
