Recipe: BLT Wraps

BLT Wraps

Serves 6.

With just one strip of bacon a serving, these wraps are a guilt-free way to enjoy late-summer tomatoes at their peak. Adapted from "Chef Bobo's Good Food Cookbook."

• 1 head Romaine lettuce

• 6 (8-in.) whole-wheat tortillas

• Light mayonnaise dressing

• 2 large beefsteak tomatoes, chopped

• 6 slices thick bacon, cooked until crisp

Prepare Romaine by breaking the leaves apart and washing under cold running water. Dry lettuce leaves and tear into bite-size pieces.

Spread 1 side of each tortilla with mayonnaise dressing. Top each with a handful of lettuce, followed by chopped tomatoes. Crumble bacon, and sprinkle over the lettuce and tomatoes. Roll up and halve crosswise.
