Recipe: Anderson Farms Pork Chops

Anderson Farms Pork Chops

Serves 4 to 6.

Note: Traditional Foods Warehouse sells meat from the farm of Lynn and Randy Anderson of Arkansaw, Wis. This is a particularly easy pork chop recipe.

• 1 tbsp. vegetable oil

• 4 thick pork chops (about 2 in. thick)

• 2 tart firm apples, cored and cut into 2-in. pieces

• 1 medium onion, peeled and cut into 2-in. pieces

• 1/4 c. raisins or craisins

• Coarse salt and freshly ground black pepper

• 2 tbsp. honey

Directions

Preheat oven to 350 degrees.

Heat the oil in a large skillet and sear the chops until browned on both sides, about 3 minutes per side. Add the apples, onion and raisins, and sprinkle with the salt and pepper. Drizzle with the honey.

Cover the pan and roast until the pork has reached about 150 degrees on an oven thermometer, about 35 to 50-minutes.
