Prayer Bars [check mark]

First layer:

½ c. (1 stick) butter, melted

4 tbsp. (¼ c.) unsweetened cocoa powder

3 tbsp. heavy cream

1 tsp. vanilla

½ c. chopped nuts

2 c. graham cracker crumbs

1 c. coconut

Second layer:

¼ c. (½ stick) butter, melted

3 tbsp. heavy cream

1 tsp. vanilla

2 tsp. dry vanilla (instant) pudding mix

2 c. sifted powdered sugar

Third layer:

1 tbsp. butter

1 (9¾ oz.) chocolate bar or 1½ c. semi-sweet or milk chocolate chips

Lightly coat a 9-by 13-inch pan with nonstick spray. For the first layer, mix the 1 stick of melted butter with cocoa powder, 3 tablespoons cream, 1 teaspoon vanilla, nuts, crumbs and coconut until well blended. Press into the bottom of the pan in an even layer. Cover and chill 15 minutes.

For the second layer, mix the ½ stick of melted butter, 3 tablespoons cream, 1 teaspoon vanilla, pudding mix and powdered sugar together until smooth. Spread over the first layer. Cover and chill another 15 minutes.

For the third layer, melt 1 tablespoon butter over hot water or in the microwave in a glass bowl for 10 seconds. Add the chocolate and stir until the chocolate is melted, either over hot water, or by zapping it 10 seconds at a time in the microwave oven, stirring between each heating interval.

Spread over the vanilla layer. Cover and chill until set, about 1 hour. Cut into squares. Makes 48 bars.

Each serving contains approximately 1 other carb. exch., 1½ fat exch.; 110 calories, 12 gm. carbohydrate, 1 gm. protein, 7 gm. fat (including 4 gm. sat. fat), 48 mg. sodium, 6 mg. calcium and 1 gm. dietary fiber.

Honey-Oatmeal Muffins

1½ c. quick or old-fashioned rolled oats, uncooked

1 c. all-purpose flour

½ c. raisins

½ c. chopped nuts

1/3 c. firmly packed brown sugar

1 tbsp. baking powder

½ tsp. salt

½ c. milk

¼ c. vegetable oil

1 egg, beaten

¼ c. honey

Preheat the oven to 400 degrees. Line 12 muffin cups with cupcake liners and coat lightly with nonstick spray. In a large bowl, mix together oats, flour, raisins, nuts, brown sugar, baking powder and salt. In a small bowl, mix together milk, oil egg and honey.

Add the liquid ingredients to the dry ingredients and stir just until moistened. Scoop the batter into the paper-lined muffin cups. Bake for 15 to 18 minutes or until golden brown. Makes 12 muffins.

Each serving contains approximately 2 bread/ starch exch., 2 fat exch.; 220 calories, 33 gm. carbohydrate, 5 gm. protein, 9 gm. fat (including 1 gm. sat. fat), 230 mg. sodium, 110 mg. calcium and 2 gm. dietary fiber.
