Always on the lookout for a bargain, I bought two "buy one, get one free" packages of ground turkey a while ago, and decided to make a turkey version of sloppy Joes. The ground beef version was a favorite of our kids when they were home, and it made an easy and economical meal for the four of us.
Adding celery, garlic, onion and bell pepper stretches the ground turkey still further and tossing in herbs peps up the blandness. A dash of chili powder would make it saucier still. Also, a little sugar tames the acidity of the tomato sauce. The mixture makes six servings, either as fillings for buns or atop toast slices. Serve with a green salad and carrot sticks for a kid-pleasing meal.
