One Great Dish: Favorite frittatas give cook a break

Frittata is just a fancy name for an oven omelet or crustless quiche. Frittatas are easy to make (no tricky timing) and can be varied with whatever you might have on hand. Once you get the proportions down, add in seasonal vegetables and your favorite cheese. The best thing about frittatas is that they may be served warm or at room temperature and can be prepared ahead. This one makes a simple supper or brunch dish or may be cut into small wedges to serve as a snack or appetizer.
