When it's cold outside, what could be better than sitting by a crackling fire with hot chocolate or some rum-infused hot apple cider? Either one of these drinks is welcome during the holidays. Make sure to use pretty, heat-proof mugs.
Fred Thompson, author of "Hot Chocolate," is an authority on the subject. This recipe is his grownup rendition of American hot chocolate. Until quite recently, most Americans have preferred a sweeter hot chocolate than is typically found in Europe and South America. Thompson's hot chocolate incorporates a little more sweetness and creaminess while holding onto a bit of European character. If you want to splurge on an immersion milk frother, you can finish these off with some steamed frothy milk.
My friend Laurie Burrows Grad makes this mulled cider every year for her big holiday party. She says she likes it better than mulled wine because if it spills, it won't stain the carpet! Feel free to halve or quarter this recipe for a smaller group, and watch how relaxed everyone becomes after a few cups of this warming potion.
You can find mulling spices in packets at the supermarket or gourmet store. This is very easy to prepare and economical to serve when you are having a crowd. I like to serve it right from my stove with a ladle so it stays warm. You can also put the cider in a container on a hot plate if you need to keep the kitchen clear. To make this for a children's party, omit the rum.
