MN woman's recipe could benefit foodshelf

Laura Skubic of St. Paul is the lone Minnesotan up against three Wisconsin finalists in The Roundy's Foundation's first Recipe Face-Off Facebook Competition.

Fans of the Facebook page for Roundy's Foundation were invited to submit a recipe using five pre-selected ingredients that are commonly found at food pantries. Skubic's recipe for Inside-Out Tuna Pie was selected by judges as a finalist. Others are recipes for a nicoise salad, peanut soup and stuffed green pepper soup.

The decision is now up to the public. Fans of the Roundy's Foundation Facebook page can vote for their favorite recipe by clicking the circle next to the recipe on Facebook. The winner gets to select a foodshelf to which Roundy's, which owns supermarkets throughout the region, will make a food donation. But don't dawdle. Voting ends on Monday, May 14.
